Pumpkin Chocolate Chip Bars
I love these bars. The original recipe started with using the Chocolate Chip Cookies recipe off of the back of the Namaste Perfect Flour Blend. But, I do not have much patience for scooping and dropping cookie dollops on a cookie sheet, it takes too much time. So I transitioned the cookies to a bar. Did I mention I love these bars? Here is how you make them:
Ingredients
2.5 cups Namaste’s Organic Perfect Flour Blend
1 tsp baking soda
1 tsp sea salt
2 sticks softened butter
3/4 cup brown sugar
1 tsp vanilla extract
2 eggs
1 15 oz can pumpkin
1 cup dark chocolate chips
Optional additions: walnuts, raisins,
rehydrated freeze-dried blueberries,
dried coconut for topping,
or whatever makes your tastebuds happy.

Instructions:
- Preheat the oven to 450 F.
- Combine all the wet ingredients.
- Add all of the dry ingredients (except chocolate chips and nuts) to the wet ingredients, make sure the mixture is thoroughly and evenly mixed.
- Now add the chocolate chips and/or extras.
- Line a 11 x 7 x 2 inches baking dish with parchment baking paper (to keep the bars from sticking upon removal).
- Pour all of the ingredients in to the pan.
- Bake for 15-20 minutes (keep an eye on them, I suggest a timer). The top should be golden brown.
Serve with organic vanilla ice cream, fresh cream, or pack a bar for lunch the next day.
